Vegan Khichadi

What you need:

  1. Quinoa: 1 cup, soaked for 3-4 hours
  2. Split moong dal: 1 cup, soaked for 2 hours
  3. Coconut oil: 1 tsp
  4. Cumin: 1 tsp
  5. Mustard seeds: 1 tsp
  6. Fennel powder: 1 tsp
  7. Coriander powder: 1 ½ tsp
  8. Turmeric powder: ½ tsp
  9. Asafoetida powder: ½ tsp
  10. Red Chilli powder: 1-2 tsp
  11. Cilantro: 2-3 tbsp
  12. Lemon juice: 1 tsp
  13. Salt

What you do:

  1. Heat the oil in a pressure cooker and lightly fry the mustard and cumin seeds.
  2. Add the quinoa and the mung dal and the other spices.
  3. Sauté for a minute.
  4. Add water and pressure cook for 5 whistles.

Pro tip: You can add vegetables like onions, tomatoes, carrots or beans to add more texture to the khichadi. The  choice of vegetables are limitless, so experiment away!

Vegan Masala Chai

What you need:

  1. Water: 3-4 cups
  2. Raw sugar: 1.5 Tbsp
  3. Tea leaves: 2 tsp
  4. Grated ginger: 1/2 to 1 tsp
  5. Cardamom powder: ½ tsp
  6. Cinnamon powder: ½ tsp
  7. Black pepper: ¼ tsp
  8. Almond milk: 1 cup

What you do:

  1. Boil the tea leaves along with sugar, ginger and the spices for 10 minutes.
  2. Let it cool for a minute
  3. Slowly add the almond milk.
  4. Strain and serve

Chickpea burgers

What you need:

  1. Chickpea: 500 gm, rinsed and drained
  2. Sunflower oil: 2 tbsp
  3. Cinnamon stick: 1
  4. Dried red chillies: 2-3
  5. Cumin seeds: 1 tsp
  6. Cloves: 4-6
  7. Turmeric powder: ½ tsp
  8. Coriander powder: 1 tsp
  9. Red chilli powder: 1 tsp
  10. Salt: 1 tsp
  11. Onion: 1, finely chopped

What you do:

  1. Heat one tablespoon of oil and add the cinnamon, cumin seeds, dried red chillies and cloves. Cook for a minute.
  2. Add the turmeric, red chilli powder, salt, ginger and onion, and saute until the onions turn translucent.
  3. Mash this mix with the chickpeas.
  4. Divide and bind into burger patties.
  5. Fry until golden brown.
  6. Serve with burger buns or pita bread.
